An early advocate of a vegetarian diet, Enrico Alliata, the Duke of Salaparuta, first published Vegetarian Cuisine and Natural Raw Food, an extensive collection of vegetarian recipes (over 1000), in 1930.

Described as a utopian gourmand and winemaker, the bon vivant believed that vegetarianism was the secret to a long and healthy life as well as “a solution to human happiness.”
